Video footage of Certified Organic Integrale at Our Mill in Tunisia


Click the link below to see amazing video footage shot by Mike Bradley on location at our Mill in Tunisia just a week ago.  This video documents in part, the very rare process of making Integrale extra virgin olive oil.  Integrale is an Italian term that references de-pitting the olives prior to crushing.  Since there are natural substances in the pits of olives that depreciate the phenols in the olive oil, it is beneficial to remove the pit to maintain optimal phenols.  This certified organic olive oil is rare and exquisite indeed.  It is the finest we have ever seen from Tunisia, and perhaps even from our mill.  There is nice footage of the malaxer churning the green olive paste.
