Our latest batch of our UP White Balsamic has a slightly more golden
cast to it, and a richer, more complex flavor. These small differences
are due to lower rainfall in Modena, Italy where the Trebbiano grapes
were grown, resulting in a higher concentration of grape solids, color,
and flavor in the grape must. Please keep in mind that just like wine grapes and olive harvests, there will be changes from crop to crop, and batch to batch. Our products are made by artisans and farmers, not in labs or factories.
