We're excited to offer you substantially lower pricing on the stainless steel bottles on the recent price list. We found a new source which has enabled us to share those savings with you. Also see the new 100 ml bottle added to the collection (please see photo below). After receiving multiple inquires about reputable olive oil courses you might take, we can really only recommend one. It's difficult for us to steer you to any of the newer courses which have recently sprung up as we cannot verify the content, credentials of instructors or how the oils are evaluated. In many you'll find a disparity in the outcome (example: defect vs no defect).
Below are links to the UC Davis Olive Center sensory courses (back to back courses, I and II). These courses are extremely robust and rigorous and there is an intensive focus on sensory calibration using advanced sensory software. UC Davis Olive Center has conducted cutting edge olive oil studies for over a decade and these are discussed in depth, so there's a nice emphasis on olive oil chemistry by Dr. Selina Wang, an renowned expert in her field. She covers applied chemistry – shelf life, and debunking myths such as the fear of cooking with high quality olive oil, what happens to olive oil at high heat, the "refrigeration test" of olive oil, etc. UC Davis Olive Center offers on the oldest, most prestigious ongoing certification courses in the United States.
