Denissimo Viscosity



You may have noticed that this most recent batch of Denissimo 1.36+ came to us a tad less viscous or thick than the first batch. Our specification for the lab measured density of this amazing product is 1.36+, meaning the floor or minimum density must be 1.36 or higher (obviously higher is better).  The most recent batch was measured at just over 1.36 density.  The first lot we received was more viscous coming in at a whopping 1.39 density as measured by lab! That said, the complexity and smoothness of the two batches are on par and the density is just one of the many parameters that we pay close attention to which drive quality in balsamic. 

However, we are smitten with the 1.39 and in talks with our partners in Modena to attempt raise the quality bar yet again so that we can offer a Denissimo with a minimum density as close to 1.39  if feasible.  Initial conversations with Acetum are leading us to believe that setting the density bar so high while also looking for the volume we want will be a very difficult feat to accomplish. The 1.39 is thicker and denser even than the boxed, wax sealed, lot numbered bottles of Vecchio and Extra Vecchio we offer which command $100 and up for a 100 ml. bottle while the 1.36 is virtually identical to the Vecchio.  But rest assured,  as usual, we’re working on raising the bar yet again for future loads of Denissimo.
